John Gallin & Son Constructs Prototype “Sushi-teria” at 601 Lexington Avenue

Wall-Mounted iPads with Custom Software For Sushi Lovers Who Spurn the Deli

NEW YORK CITY, NY – December 9, 2011 – (RealEstateRama) — Construction firm John Gallin & Son has completed work on the city’s first “Sushi-teria” for noted restaurateur Victor Chan, at the Atrium Shops + Cafés at 601 Lexington Avenue (formerly known as Citigroup Center) in midtown Manhattan.

The installation, which just opened, is the first of at least 30 planned outlets by Mr. Chan that are intended to deliver a new concept in sushi service for New Yorkers.

Construction of the 601 Lexington store was supervised by John Gallin & Son president Mark Varian and Andrew Cortese, vice president and project manager.

Mr. Chan, who operates the popular SUteiShi restaurant in the financial district, says his Sushi-teria chain is designed to serve sushi lovers “who may not have time for a sit-down restaurant, but find little appeal in the prospect of getting their sushi in a deli or supermarket.”

Using Sushi-teria’s proprietary software, customers place their orders on one of a dozen iPads installed on the walls and have their orders delivered to them within three to five minutes, Mr. Chan explains. “The food will have been freshly prepared and the rolls can be customized in a mix-and-match fashion, so there is no need to order six rolls of this and six of that,” he says.

Designed by the lower Manhattan-based interior architecture and engineering firm known as form-ula solutions group (CQ), the 1,000-square-foot Sushi-teria has a multi-color motif and finishes suitable for high-quality restaurants, but no seating for dining, the restaurateur adds. However, those who wish to sit can do so at 601 Lexington’s Atrium Shops + Cafés right outside the Sushi-teria, just a couple of steps away.

The Sushi-teria at 601 Lexington Avenue is situated in the atrium, with no street access. “For this prototype installation we wanted a fairly controlled environment where we can test the appeal of our concept, as well as our operating procedures,” says Mr. Chan. “The plan is to have 30 locations in the five boroughs within five years.”

The oldest family-owned construction firm in New York City, John Gallin & Son, Inc. was founded in 1886 as a small masonry and concrete company, and now specializes in interior construction.
